Ingredients
- 1 cup quinoa, rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

Add the carrots, celery, and zucchini, and cook for another 5 minutes.

Stir in the quinoa, vegetable broth, dried thyme, dried oregano, and bay leaf. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the quinoa is cooked and the vegetables are tender.

Season with salt and pepper to taste.

Remove the bay leaf before serving. Garnish with fresh parsley.
