How To Make Crockpot Vegetable Soup Recipe

A hearty and nutritious vegetable soup made in a crockpot.

Serves:

Ingredients

  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 2 cups of chopped kale

Instructions

  1. In a crockpot, add vegetable broth, diced tomatoes, carrots, celery, onion, garlic, thyme, basil, salt, and pepper. Stir to combine.

  2. Cook on low for 6-8 hours or on high for 3-4 hours.

  3. Stir in chopped kale during the last 30 minutes of cooking.

  4. Serve hot.
