How To Make Crockpot Black Bean Soup Recipe

A hearty and healthy black bean soup cooked in a crockpot with warm spices, veggies, and a dash of lime.

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes
  • 3 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 lime, juiced
  • Cilantro, sour cream, and avocado, for serving

Instructions

  1. In a crockpot, add onion, garlic, black beans, diced tomatoes, vegetable broth, cumin, and chili powder. Stir well.

  2. Cook on low for 8 hours.

  3. Blend soup using an immersion blender or transfer to a blender and blend until smooth.

  4. Add salt and pepper to taste and lime juice. Stir well.

  5. Serve with cilantro, sour cream, and avocado.
