How To Make Vegetarian Slow Cooker Black Bean Soup Recipe

A warm and hearty soup with black beans, veggies and spices that comes together easily in a slow cooker.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and diced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine black beans, onion, garlic, carrots, celery, red bell pepper, jalapeño pepper, vegetable broth, cumin, chili powder, salt and pepper.

  2. Cook on high for 6 hours or on low for 8 hours.

  3. Serve hot with desired toppings.
