Ingredients

  • 2 cans of black beans, drained and rinsed
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups of vegetable broth
  • 1 tbsp of chili powder
  • 1 tsp of cumin
  • 1 tsp of paprika
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime wedges, tortilla chips

Instructions

  1. In a slow cooker, add the black beans, onion, carrots, celery, garlic, vegetable broth, chili powder, cumin, paprika, salt, and pepper. Stir to combine.

  2. Cover the slow cooker and cook on low heat for 4-6 hours, until the vegetables are tender and the soup is hot and flavorful.

  3. Using an immersion blender or a regular blender, puree about half of the soup until it reaches your desired texture.

  4. Ladle the soup into bowls and add your desired toppings, such as avocado, cilantro, lime wedges, or tortilla chips.
