Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 2 cups vegetable broth

Instructions

  1. In a slow cooker, add quinoa, black beans, red bell pepper, diced tomatoes, onion, garlic, chili powder, cumin, paprika, and salt. Mix to combine.

  2. Add vegetable broth and stir until everything is evenly distributed.

  3. Cover and cook on high for 4 hours or low for 6 hours.

  4. Once done, fluff the quinoa with a fork.

  5. Serve hot with your favorite toppings, such as avocado, cheese, or sour cream.
