Ingredients

  • 1 cup dried black beans, rinsed and soaked overnight
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, sliced avocado, cilantro

Instructions

  1. Add soaked black beans, vegetable broth, onion, red bell pepper, garlic, cumin, chili powder, and smoked paprika to a slow cooker.

  2. Stir to combine and season with salt and pepper.

  3. Cover and cook on high for 6 hours or until beans are tender.

  4. Use an immersion blender to blend the soup until smooth (or transfer to a blender and blend in batches).

  5. Serve hot with desired toppings.
