How To Make Low Calorie Slow Cooker Black Bean Soup

A hearty and flavorful soup with a spicy kick, packed with healthy black beans and vegetables.

Ingredients

  • 2 cans (15oz each) black beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 4 cups vegetable broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Instructions

  1. In a slow cooker, combine black beans, onion, garlic, carrots, celery, red bell pepper, jalapeno pepper, cumin, paprika, and chili powder.

  2. Pour vegetable broth over the top and stir to combine.

  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.

  4. Once vegetables are tender, use an immersion blender or transfer soup to a blender to puree until smooth.

  5. Stir in cilantro and season with salt and pepper to taste.

  6. Serve hot with additional cilantro, if desired.
