  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a slow cooker, combine the black beans, kidney beans, pinto beans, onion, bell pepper, garlic, diced tomatoes, vegetable broth, chili powder, cumin, paprika, and salt. Mix well to combine.

  2. Cook on low heat for 4 hours, or on high heat for 2 hours, until the flavors are well blended and the chili has thickened.
