Ingredients

  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 6 smoked anchovies, chopped
  • 1 cup breadcrumbs
  • 4 eggs
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, and sauté until fragrant.

  3. Add chopped smoked anchovies to the skillet and cook for 2-3 minutes, until they start to break down.

  4. In a separate small skillet, toast the breadcrumbs until crispy and golden brown. Set aside.

  5. In the same small skillet, fry the eggs to your preferred level of doneness.

  6. Add the cooked spaghetti to the skillet with the anchovies and toss to coat. Season with salt and pepper to taste.

  7. Divide the spaghetti into 4 serving plates. Top each plate with a fried egg and sprinkle with the crispy breadcrumbs.

  8. Garnish with fresh parsley and serve hot.
