  • 1lb fresh Oregon salmon, cooked and flaked
  • 1/4 cup breadcrumbs
  • 1/4 cup minced fresh parsley
  • 1/4 cup minced red onion
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine the cooked and flaked salmon, breadcrumbs, parsley, red onion, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Mix well.

  2. Shape the mixture into patties, about 3 inches in diameter.

  3. Heat the olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.

  4. Serve the salmon patties hot, with your favorite sauce or condiments.
