How To Make Oregon Salmon Patties

Ingredients
- 1lb fresh Oregon salmon, cooked and flaked
- 1/4 cup breadcrumbs
- 1/4 cup minced fresh parsley
- 1/4 cup minced red onion
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil

In a large bowl, combine the cooked and flaked salmon, breadcrumbs, parsley, red onion, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Mix well.

Shape the mixture into patties, about 3 inches in diameter.

Heat the olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
