How To Make Salmon Burgers with Kale Salsa

Ingredients
- 1 lb salmon fillet, skin removed and chopped
- 1/2 cup bread crumbs
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1 garlic clove, minced
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 4 whole wheat burger buns
- Kale Salsa:
- 2 cups chopped kale
- 1/4 cup diced tomatoes
- 1/4 cup diced cucumber
- 1/4 cup diced red onion
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper, to taste

In a large bowl, combine the chopped salmon, bread crumbs, red onion, parsley, garlic, lemon zest, salt, and black pepper. Mix well until ingredients are evenly distributed.

Shape the salmon mixture into 4 patties. Place on a plate and refrigerate for at least 10 minutes to firm up.

Heat olive oil in a large skillet over medium heat. Add the salmon patties and cook for about 4-5 minutes per side, or until golden brown and cooked through.

While the burgers are cooking, prepare the kale salsa by combining chopped kale, diced tomatoes, cucumber, red onion, lemon juice, olive oil, salt, and pepper in a bowl. Mix well.

Toast the burger buns and assemble the burgers by placing a salmon patty on each bun. Top with a generous amount of kale salsa.

Serve the salmon burgers with a side of sweet potato fries or a green salad, if desired.
