Ingredients

  • 1 lb fresh salmon fillets, skin removed and diced
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp Caribbean jerk seasoning
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1/4 cup milk
  • Vegetable oil, for frying
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the all-purpose flour, baking powder, Caribbean jerk seasoning, ground cumin, paprika, cayenne pepper, garlic powder, and onion powder. Mix well.

  2. In a separate bowl, combine the diced salmon, chopped cilantro, chopped red bell pepper, chopped green onions, and minced garlic. Season with salt and pepper to taste.

  3. Add the beaten eggs and milk to the salmon mixture. Mix until well combined.

  4. Gradually add the dry flour mixture to the salmon mixture, stirring until a thick batter forms.

  5. Heat vegetable oil in a large frying pan over medium heat.

  6. Drop spoonfuls of the salmon batter into the hot oil, flattening them slightly with the back of a spoon.

  7. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.

  8. Remove the fritters from the oil and drain on paper towels to remove excess oil.

  9. Serve the Caribbean-style fried salmon fritters hot, with a side of mango salsa or spicy mayo.
