
How To Make Mango Couscous
Sweet mangoes and raisins, along with spicy jalapeno, adds bites of sweet-savory flavors to this herbed and creamy mango couscous dish!

Ingredients
- 1cupcouscous
- 2tbspolive oil
- 1garlic clove
- 1mango
- 1jalapeno
- ½cupraisins
- 1ripe tomato
- 1juice of lime
- ¼cupsmall cilantro sprigs
- ¼cupsmall parsley sprigs
- salt
Instructions

Prepare the couscous according to the package directions. Set aside.

Heat 1 tablespoon of the olive oil in a large sauté pan over high heat. Add garlic, mango, and jalapeno and sauté until the mango begins to color lightly.

Stir in the remaining tablespoon of olive oil, the couscous, raisins, tomato, lime juice, cilantro, and parsley and toss to heat through. Season with salt.

Serve hot or at room temperature, and enjoy!
