How To Make Warm Beet, Chorizo & Pear Salad
Serves:
Ingredients
- 4 medium beets, peeled and cut into wedges
- 2 chorizo sausages, sliced
- 2 pears, cored and sliced
- 4 cups of arugula
- 1/4 cup of crumbled goat cheese
- 2 tablespoons of balsamic vinegar
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Toss the beet wedges with 1 tablespoon of olive oil, season with salt and pepper, and spread them on a baking sheet. Roast in the oven for 20-25 minutes until tender.

In a skillet, cook the sliced chorizo over medium heat until crispy, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the pear slices and cook for 2-3 minutes until slightly softened.

In a large bowl, combine the roasted beets, chorizo slices, pear slices, arugula, crumbled goat cheese, balsamic vinegar, and the remaining tablespoon of olive oil. Toss gently to combine.

Season with additional salt and pepper if desired.

Serve the warm beet, chorizo & pear salad immediately and enjoy!
