Ingredients

  • 2 fennel bulbs, thinly sliced
  • 4 celery stalks, thinly sliced
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of fresh lemon juice
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional)

Instructions

  1. In a large bowl, combine the sliced fennel and celery.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the fennel and celery and toss to coat.

  4. Optional: sprinkle with grated Parmesan cheese before serving.
