- 2 fennel bulbs, thinly sliced
- 4 celery stalks, thinly sliced
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of fresh lemon juice
- Salt and pepper to taste
- Parmesan cheese, grated (optional)
Instructions

In a large bowl, combine the sliced fennel and celery.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the fennel and celery and toss to coat.
