How To Make Fresh Salmon with Thai Noodle Salad

Ingredients

  • 4 fresh salmon fillets
  • 8 oz rice noodles
  • 1/4 cup soy sauce
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 2 tbsp honey
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, torn
  • 1/4 cup peanuts, chopped

Instructions

  1. Preheat grill or grill pan. Season salmon fillets with salt and pepper.

  2. Cook rice noodles according to package instructions. Drain and rinse with cold water.

  3. In a small bowl, whisk together soy sauce, lime juice, fish sauce, honey, grated ginger, and minced garlic.

  4. In a large bowl, combine cooked rice noodles, sliced red bell pepper, julienned carrot, cilantro, and mint leaves.

  5. Pour the dressing over the noodle mixture and toss until well coated.

  6. Grill salmon fillets over medium-high heat for about 3-4 minutes per side, or until cooked through.

  7. Serve the grilled salmon on top of the Thai noodle salad, and garnish with chopped peanuts.
