Ingredients

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumbers
  • 1 cup chopped bell peppers
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/4 cup chopped peanuts
  • For the dressing:
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine the cooked rice noodles, shredded carrots, sliced cucumbers, chopped bell peppers, fresh cilantro, sliced green onions, and chopped peanuts.

  3. In a separate small bowl, whisk together the soy sauce, lime juice, honey, sesame oil, grated ginger, and minced garlic to make the dressing.

  4. Pour the dressing over the noodle mixture and toss well to combine.

  5. Serve chilled and enjoy!
