How To Make Zesty Rice Noodle Salad

Ingredients
- 8 oz rice noodles
- 1 cup shredded carrots
- 1 cup thinly sliced cucumbers
- 1 cup chopped bell peppers
- 1/2 cup chopped fresh cilantro
- 1/4 cup sliced green onions
- 1/4 cup chopped peanuts
- For the dressing:
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
Instructions

Cook the rice noodles according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked rice noodles, shredded carrots, sliced cucumbers, chopped bell peppers, fresh cilantro, sliced green onions, and chopped peanuts.

In a separate small bowl, whisk together the soy sauce, lime juice, honey, sesame oil, grated ginger, and minced garlic to make the dressing.
