
How To Make Thai-Inspired Chicken Noodle Soup with Mint Green Tea
Each sip and bite of this chicken noodle soup is inspired by hearty Thai flavors, and made refreshing with green tea, for a unique meal!

Ingredients
- 8cupschicken broth
- 4shallots,peeled, quartered
- 1ginger,8-inch piece, peeled, thinly sliced
- 5lemongrass stalks,pounded, tough outer leaves removed
- 6bagsLipton Green Tea with Mint
- 2chicken breasts,boneless, skinless
- ¼cupsoy sauce
- 3tbspfish sauce,optional
- lime,juiced, to taste
- rice noodles,or green tea soba noodles
- fresh mint,for garnish
- Thai basil,for garnish
- cilantro,for garnish
Instructions

In a large pot, combine chicken broth, shallots, ginger, and lemongrass. Bring to a boil and remove from heat.

Steep the Lipton Green Tea with Mint tea bags in broth for 2 minutes. Remove, squeezing bags.

Bring broth back to a simmer and add chicken breasts. Turn off heat, and let chicken breasts poach for 20 to 25 minutes, until fully cooked.

Once the chicken has cooked, remove and let cool.

Scoop out shallot, ginger and lemongrass. Season broth to taste with soy sauce, fish sauce and lime juice. Shred cooled chicken breast.
