  • 4 cups mixed spring greens
  • 1/2 cup sliced roasted almonds
  • 1/4 cup crumbled feta cheese
  • 1 small red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper, to taste


  1. Preheat oven to 350°F.

  2. Spread sliced almonds out on a baking sheet and roast for 8-10 minutes, until lightly golden.

  3. In a large bowl, toss together spring greens, roasted almonds, crumbled feta cheese, and thinly sliced red onion.

  4. Drizzle with balsamic vinaigrette and season with salt and pepper to taste.

  5. Serve chilled.
