  • 4 medium-sized spring beets, trimmed and washed
  • 6 ounces fresh goat cheese, crumbled
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • salt and pepper, to taste


  1. Preheat the oven to 375F. Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.

  2. Once the beets are cool, peel and slice them into wedges.

  3. In a small bowl, whisk together olive oil, honey, mustard, and apple cider vinegar to make the dressing.

  4. Arrange the beet wedges on a serving platter. Drizzle the dressing over the beets.

  5. Top the beets with crumbled goat cheese, toasted almonds, and chopped parsley.
