How To Make Spring Beet Salad with Goat Cheese Recipe

Ingredients
- 4 medium-sized spring beets, trimmed and washed
- 6 ounces fresh goat cheese, crumbled
- 1/4 cup sliced almonds, toasted
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- salt and pepper, to taste

Preheat the oven to 375F. Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.

Once the beets are cool, peel and slice them into wedges.
