Ingredients

  • 6 cups baby spinach leaves
  • 2 apples, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spinach, apples, red onion, walnuts, and dried cranberries.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Sprinkle the feta cheese over the top and serve.
