Spinach and Quinoa Salad Recipe

How To Make Spinach and Quinoa Salad

  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1 red onion, diced
  • 3 cloves garlic, minced
  • 6 cups baby spinach, washed and dried
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • Salt and pepper to taste


  1. In a medium saucepan, bring the quinoa and vegetable broth to a boil. Reduce heat and simmer for 15-20 minutes or until the liquid is absorbed and the quinoa is tender.

  2. In a skillet, heat the olive oil over medium heat. Add the red onion and garlic and sauté until soft.

  3. In a large bowl, combine the cooked quinoa, sautéed onion and garlic, and baby spinach. Toss well to coat.

  4. Sprinkle feta cheese, chopped walnuts, and dried cranberries over the top. Season with salt and pepper to taste.
