For Taco Salad:
- 1headRomaine lettuce,washed and roughly chopped
- 1avocado,peeled, pitted and diced
- 2cupscherry tomatoes
- 2cupsfresh cilantro leaves,loosely packed
- 1cupshredded sharp Cheddar cheese
- 1cupTortilla strips
- 1canblack beans,rinsed and drained
- 1canwhole kernel corn,drained
- 1canblack olives,drained
- half of a small red onion,halved and thinly sliced
- cilantro lime dressing,see below
For Skinny Cilantro Lime Dressing:
- 1cupfresh cilantro,loosely packed
- ¼cuporange juice
- 3tbsplime juice
- 1tbsphoney,optional sweetener
- ¼tspground cumin
- â…›tspsalt
- â…›tspfreshly-ground black pepper
- 2tbspolive oil
Instructions

Toss all salad ingredients together until combined lined up on top of the lettuce. Drizzle and toss with honey-lime vinaigrette and serve.

For the dressing, add cilantro, orange juice, lime juice, honey, cumin, salt, and pepper to a food processor or blender and pulse until combined. Gradually stream in the olive oil while pulsing until combined.
