Simple Taco Salad Recipe

How To Make Skinny Taco Salad

You’ll be amazed at the texture of this taco salad. Tortilla, shredded into strips, mixed with tomatoes, avocadoes, and lettuce. It is a must-try!

For Taco Salad:

  • 1headRomaine lettuce,washed and roughly chopped
  • 1avocado,peeled, pitted and diced
  • 2cupscherry tomatoes
  • 2cupsfresh cilantro leaves,loosely packed
  • 1cupshredded sharp Cheddar cheese
  • 1cupTortilla strips
  • 1canblack beans,rinsed and drained
  • 1canwhole kernel corn,drained
  • 1canblack olives,drained
  • half of a small red onion,halved and thinly sliced
  • cilantro lime dressing,see below

For Skinny Cilantro Lime Dressing:

  • 1cupfresh cilantro,loosely packed
  • ¼cuporange juice
  • 3tbsplime juice
  • 1tbsphoney,optional sweetener
  • ¼tspground cumin
  • tspsalt
  • tspfreshly-ground black pepper
  • 2tbspolive oil


  1. Toss all salad ingredients together until combined lined up on top of the lettuce. Drizzle and toss with honey-lime vinaigrette and serve.

  2. For the dressing, add cilantro, orange juice, lime juice, honey, cumin, salt, and pepper to a food processor or blender and pulse until combined. Gradually stream in the olive oil while pulsing until combined.
