Ingredients

  • 4 brill fillets
  • 1 cup puy lentils
  • 8 shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Rinse the puy lentils under cold water and cook them according to package instructions until tender.

  3. In a large skillet, heat the olive oil over medium heat. Add the sliced shiitake mushrooms and minced garlic. Cook for 5 minutes or until mushrooms are tender.

  4. Season the brill fillets with salt and pepper. Place them on a baking sheet lined with parchment paper and drizzle with half of the lemon juice.

  5. Roast the brill fillets in the preheated oven for 10-12 minutes or until cooked through.

  6. In a large bowl, combine the cooked puy lentils, sautéed mushrooms and garlic, and the remaining lemon juice. Toss to combine.

  7. Serve the roasted brill fillets on a bed of the puy lentil mixture.

  8. Enjoy!
