Ingredients

  • 4 salmon fillets
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup Puy lentils
  • 2 1/2 cups water
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a small bowl, whisk together the Dijon mustard, honey, olive oil, salt, and pepper.

  3. Place the salmon fillets in a shallow dish and pour the honey mustard marinade over them. Let them marinate for 10 minutes.

  4. While the salmon marinates, rinse the Puy lentils under cold water. In a saucepan, bring the water to a boil and add the lentils. Cook for 15-20 minutes, or until tender. Drain any excess water.

  5. In a separate pan, heat some olive oil over medium heat. Add the red onion and garlic and sauté until softened.

  6. Add the cooked lentils to the pan with the onion and garlic. Stir in the fresh parsley and lemon juice. Season with salt and pepper to taste.

  7. Place the marinated salmon fillets on the preheated grill. Cook for about 5-6 minutes on each side, or until they reach your desired level of doneness.

  8. Serve the grilled salmon on a bed of Puy lentils and garnish with additional fresh parsley, if desired.
