How To Make Hot-smoked salmon, lentil & pomegranate salad

Ingredients
- 4 hot-smoked salmon fillets
- 1 cup of dried green lentils
- 1 pomegranate, seeds removed
- 1 red onion, finely chopped
- 1 cucumber, diced
- 2 tablespoons of fresh dill, chopped
- Juice of 1 lemon
- 3 tablespoons of olive oil
- Salt and pepper, to taste
Instructions

Cook the lentils according to package instructions. Drain and set aside.

In a large bowl, combine the lentils, pomegranate seeds, red onion, cucumber, and fresh dill.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Add the dressing to the lentil mixture and toss gently to combine.

Divide the salad onto serving plates and top each with a hot-smoked salmon fillet.
