  • ½cupscucumbers,diced, partially peeled
  • 1cuptomato,seeded, diced
  • ¼cupred onion,diced
  • 2tbsplemon juice,fresh
  • ½tbspfresh parsley,minced
  • 1tbspextra virgin olive oil
  • ½tspkosher salt and pepper,to taste
  • 15ozchickpeas,1 can, rinsed and drained


  1. Combine the cucumbers, tomato, onion, lemon juice, parsley, olive oil, salt, pepper, and chickpeas together. Toss well.
