Serves:

Ingredients

  • 4 pork chops
  • 2 lemons, juiced and zested
  • 2 sprigs of fresh rosemary, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • 1 can of chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup of red onion, finely chopped
  • 2 tablespoons of fresh parsley, chopped
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of honey

Instructions

  1. In a bowl, combine the lemon zest, lemon juice, rosemary, garlic, olive oil, salt, and pepper. Mix well.

  2. Pour the marinade over the pork chops and let them marinate for at least 10 minutes.

  3. Heat a grill or a grill pan over medium-high heat. Cook the pork chops for about 4-5 minutes on each side, or until cooked through.

  4. In a separate bowl, combine the chickpeas, red bell pepper, cucumber, red onion, and parsley.

  5. In a small bowl, whisk together the red wine vinegar and honey. Pour the dressing over the chickpea salad and toss to combine.

  6. Serve the grilled pork chops alongside the chickpea salad.
