How To Make Butternut & broccoli super salad with mackerel

Ingredients
- 1 small butternut squash, peeled, seeded, and cubed
- 2 cups broccoli florets
- 4 fillets of mackerel
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup pumpkin seeds
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Place the cubed butternut squash on a baking sheet and drizzle with olive oil. Season with salt and pepper. Roast for 25-30 minutes or until tender and slightly caramelized.

Steam the broccoli florets for 5-7 minutes until bright green and slightly tender. Set aside.

In a separate pan, cook the mackerel fillets over medium heat for 2-3 minutes on each side until cooked through.

In a large bowl, combine the mixed greens, cherry tomatoes, red onion, pumpkin seeds, and crumbled feta cheese.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.

Add the roasted butternut squash, steamed broccoli, and cooked mackerel to the salad bowl. Drizzle with the dressing and toss gently to combine.
