Ingredients

  • 2 mackerel fillets
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or broiler.

  2. Season the mackerel fillets with salt and pepper.

  3. Grill or broil the mackerel fillets for 3-4 minutes on each side, until cooked through.

  4. In a large salad bowl, combine the mixed greens, avocado, cucumber, cherry tomatoes, cilantro, and mint.

  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  6. Drizzle the dressing over the salad and toss to coat.

  7. Divide the salad among 4 plates and top each with a mackerel fillet.

  8. Serve immediately.
