Ingredients

  • 2 smoked mackerel fillets, flaked
  • 2 oranges, peeled and segmented
  • 1 cup couscous
  • 1 cup vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pomegranate seeds
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring vegetable broth to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes.

  2. Fluff couscous with a fork and transfer to a large bowl.

  3. Add flaked smoked mackerel, orange segments, parsley, mint, red onion, and pomegranate seeds to the bowl.

  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.

  5. Serve the smoked mackerel, orange & couscous salad chilled or at room temperature.
