How To Make Smoked Mackerel, Orange & Couscous Salad

Ingredients
- 2 smoked mackerel fillets, flaked
- 2 oranges, peeled and segmented
- 1 cup couscous
- 1 cup vegetable broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup pomegranate seeds
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a saucepan, bring vegetable broth to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes.

Fluff couscous with a fork and transfer to a large bowl.

Add flaked smoked mackerel, orange segments, parsley, mint, red onion, and pomegranate seeds to the bowl.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.

Serve the smoked mackerel, orange & couscous salad chilled or at room temperature.
