How To Make Roast Radish, New Potato & Peppered Mackerel Salad

Ingredients
- 1 bunch of radishes, halved
- 1 lb new potatoes, quartered
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 fillets of peppered mackerel
- 4 cups mixed salad greens
- 1 lemon, juiced
- 2 tbsp fresh dill, chopped
Instructions

Preheat the oven to 400°F (200°C).

Toss the radishes and new potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, until tender and golden.

Meanwhile, cook the peppered mackerel fillets according to package instructions.

In a large bowl, combine the roasted radishes and new potatoes with the mixed salad greens. Squeeze the lemon juice over the salad and toss to combine.

Flake the cooked mackerel fillets and distribute them over the salad.

Sprinkle the salad with fresh dill and additional salt and pepper if desired.
