How To Make Butter Bean & Chilli Tomato Salad

Ingredients
- 2 cans of butter beans, drained
- 1 pint of cherry tomatoes, halved
- 2 green chillies, finely chopped
- 1 small red onion, thinly sliced
- 1 handful of fresh parsley, chopped
- 2 tablespoons of extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions

In a large bowl, combine the butter beans, cherry tomatoes, green chillies, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the salad and gently toss to combine.

Serve immediately or refrigerate for a few hours to allow the flavors to meld together.
