Serves:

Ingredients

  • 4 cups of mixed salad greens
  • 1 cup of blackberries
  • 1 small beetroot, cooked and thinly sliced
  • 1/2 cup of crumbled goat’s cheese
  • 1/4 cup of poppy seeds
  • 4 slices of bread
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Cut the bread into small cubes and place them on a baking sheet. Drizzle with olive oil and sprinkle with poppy seeds, salt, and pepper. Toss to coat evenly.

  3. Bake the croutons in the preheated oven for about 5 minutes, or until they are golden and crispy. Remove from the oven and set aside to cool.

  4. In a large bowl, combine the mixed salad greens, blackberries, and sliced beetroot. Toss gently to mix.

  5. Sprinkle the crumbled goat’s cheese over the salad.

  6. Add the cooled poppy seed croutons on top.

  7. Drizzle with your favorite salad dressing or a simple olive oil and balsamic vinegar dressing.

  8. Serve immediately and enjoy!
