Ingredients

  • 4 medium-sized potatoes, diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/4 cup sweet onion, finely chopped
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the diced potatoes in a pot of salted water until tender. Drain and let cool.

  2. In a bowl, mix the mayonnaise, Greek yogurt, sweet onion, dijon mustard, honey, and apple cider vinegar. Season with salt and pepper.

  3. Add the cooled potatoes to the bowl and gently toss to coat them with the dressing.

  4. Refrigerate for at least 1 hour to allow the flavors to meld together.

  5. Serve the potato salad chilled, garnished with fresh parsley.
