How To Make Roasted Beetroot & Goat’s Cheese Salad

Ingredients
- 4 medium beetroots, peeled and sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups mixed greens
- 1/2 cup crumbled goat’s cheese
- 1/4 cup chopped walnuts
- 1/4 cup balsamic vinegar
- 2 tbsp honey
Instructions

Preheat oven to 400°F (200°C).

Place beetroot slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 45 minutes, or until tender.

In a small bowl, whisk together balsamic vinegar and honey to make the vinaigrette.

In a large salad bowl, toss the mixed greens with the vinaigrette.

Arrange the roasted beetroot slices on top of the greens.

Sprinkle with crumbled goat’s cheese and chopped walnuts.
