How To Make Roasted Beetroot & Goat’s Cheese Salad

Serves:

Ingredients

  • 4 medium beetroots, peeled and sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1/2 cup crumbled goat’s cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Place beetroot slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 45 minutes, or until tender.

  3. In a small bowl, whisk together balsamic vinegar and honey to make the vinaigrette.

  4. In a large salad bowl, toss the mixed greens with the vinaigrette.

  5. Arrange the roasted beetroot slices on top of the greens.

  6. Sprinkle with crumbled goat’s cheese and chopped walnuts.

  7. Serve and enjoy!
