Ingredients

  • 4 medium beets, cooked, peeled, and diced
  • 2 apples, cored and thinly sliced
  • 1 cup sour cream
  • 2 tbsp horseradish
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a bowl, combine the diced beets and sliced apples.

  2. In a separate bowl, mix together the sour cream, horseradish, lemon juice, salt, and pepper.

  3. Pour the horseradish mackerel cream over the beet and apple mixture. Gently toss to coat.

  4. Garnish with fresh dill before serving.
