Ingredients

  • 1 lb. beef sirloin, thinly sliced
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • Salt and black pepper to taste
  • 1 tbsp. olive oil
  • 4 cups mixed greens
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled queso fresco
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  1. In a small bowl, combine cumin, chili powder, garlic powder, salt and black pepper. Rub all over the beef slices.

  2. Heat oil in a large skillet over medium-high heat. Add beef and cook for about 5 minutes per side until browned and cooked through.

  3. In a large bowl, combine mixed greens, black beans, corn, red onion, cilantro and queso fresco. Divide among serving plates.

  4. Top each plate with sliced beef and avocado. Squeeze lime wedges over the top.
