Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 4 cups lettuce, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup lime juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp honey
  • Salt and pepper to taste
  • Tortilla chips (optional)

Instructions

  1. In a pan, cook the ground beef over medium heat until browned. Drain any excess grease.

  2. Add the taco seasoning and cook according to the package instructions.

  3. In a large bowl, combine the shredded lettuce, cherry tomatoes, black beans, corn kernels, red onion, and cilantro. Toss to mix well.

  4. In a separate small bowl, whisk together the lime juice, apple cider vinegar, olive oil, honey, salt, and pepper to make the dressing.

  5. Pour the dressing over the salad and toss until evenly coated.

  6. Divide the salad among four plates and top with the cooked ground beef.

  7. Sprinkle shredded cheddar cheese over each plate and garnish with tortilla chips, if desired.
