Ingredients

  • 1 (12-pound) turkey
  • 1 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • Salt and pepper to taste
  • 4 cups baby carrots
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup

Instructions

  1. Preheat the oven to 325°F (165°C) and place the turkey in a roasting pan.

  2. In a small bowl, mix together the brown sugar, Dijon mustard, cinnamon, nutmeg, cloves, salt, and pepper. Rub this glaze mixture all over the turkey, making sure to coat it evenly.

  3. Roast the turkey in the preheated oven for about 3 hours or until the internal temperature reaches 165°F (74°C). Baste the turkey with the glaze every 30 minutes during cooking.

  4. While the turkey is roasting, prepare the candied carrots. In a large skillet, melt the butter over medium heat. Add the baby carrots and sauté for 5 minutes.

  5. Sprinkle the brown sugar over the carrots and stir until it melts and coats the carrots evenly. Drizzle the maple syrup over the carrots and continue to cook for another 5 minutes until the carrots are tender and coated in the glaze.

  6. Once the turkey is cooked, remove it from the oven and let it rest for 20 minutes. Serve the turkey with the candied carrots on the side.
