Ingredients

  • 1 lb beef suet
  • 1 lb cooking apples, peeled, cored, and chopped
  • 1 lb mixed dried fruit (raisins, currants, sultanas)
  • 8 oz candied peel
  • 8 oz dark brown sugar
  • 2 oranges, zest and juice
  • 2 lemons, zest and juice
  • 2 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 cup brandy

Instructions

  1. In a large mixing bowl, combine the beef suet, chopped apples, mixed dried fruit, candied peel, dark brown sugar, orange zest and juice, lemon zest and juice, mixed spice, ground cinnamon, ground nutmeg, and ground cloves.

  2. Mix well until all the ingredients are evenly distributed.

  3. Cover the bowl with a clean cloth and let it sit overnight to allow the flavors to meld together.

  4. The next day, preheat the oven to 250°F (120°C).

  5. Transfer the mincemeat mixture to a large baking dish or roasting tray.

  6. Cover with aluminum foil and place in the oven for 3 hours, stirring occasionally.

  7. Remove from the oven and let it cool completely.

  8. Once cooled, stir in the brandy.

  9. Transfer the mincemeat to sterilized jars and seal.

  10. Store in a cool, dark place for at least two weeks before using.
