How To Make Mix & Match Mini Christmas Puddings

This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Serves:

Ingredients

  • 100g mixed dried fruits (raisins, currants, chopped dates)
  • 50g candied cherries, quartered
  • 50g chopped nuts (walnuts, almonds, pecans)
  • 50g breadcrumbs
  • 50g self-raising flour
  • 50g suet (vegetable or beef)
  • 50g dark brown sugar
  • 1 tbsp mixed spice
  • 1 tbsp black treacle
  • 1 tbsp brandy or orange juice
  • Butter or oil, for greasing
  • for the decoration:
  • Icing sugar, for dusting
  • Holly or edible decorations, for garnish
  • Brandy butter or custard, for serving

Instructions

  1. In a large bowl, combine the dried fruits, cherries, nuts, breadcrumbs, flour, suet, dark brown sugar, and mixed spice.

  2. Stir in the treacle and brandy (or orange juice) until well combined.

  3. Divide the mixture into 4 portions and shape each portion into a small pudding shape.

  4. Grease 4 pudding basins or ramekins with butter or oil and place each pudding into a basin/ramekin.

  5. Cover each basin/ramekin with a piece of greased parchment paper or foil, securing it with a string or rubber band.

  6. Place the basins/ramekins in a steamer or large saucepan with a steamer insert filled with water. Steam the puddings for 2 hours, checking the water level periodically to ensure it doesn’t boil dry.

  7. Once steamed, remove the basins/ramekins from the steamer and let them cool slightly before turning out onto serving plates.

  8. To decorate, dust each pudding with icing sugar and garnish with holly or other edible decorations.

  9. Serve warm with brandy butter or custard.
