A wonderful take on the classic pasta dish and a healthier version at that! This pesto spaghetti squash recipe would have you drooling the second it comes off the pot, and smothered with mozzarella cheese makes this simply irresistible.

Ingredients
- 1 spaghetti squash, medium, cooked
- 1 tbsp olive oil
- ¾ cup pesto sauce
- 4 oz mozzarella cheese, shredded
- ¼ cup Parmesan cheese, grated
Instructions
- Heat oil in a large skillet over medium high heat, add spaghetti squash.
- Using a couple of forks, mix in pesto.
- Cook just long enough to heat through, mix in cheeses, until everything is well mixed and cheese is beginning to melt.
- Serve immediately.
