How To Make Pesto Spaghetti Squash with Mozzarella

A wonderful take on the classic pasta dish and a healthier version at that! This pesto spaghetti squash recipe would have you drooling the second it comes off the pot, and smothered with mozzarella cheese makes this simply irresistible.

  • 1 spaghetti squash, medium, cooked
  • 1 tbsp olive oil
  • ¾ cup pesto sauce
  • 4 oz mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated


  1. Heat oil in a large skillet over medium high heat, add spaghetti squash.
  2. Using a couple of forks, mix in pesto.
  3. Cook just long enough to heat through, mix in cheeses, until everything is well mixed and cheese is beginning to melt.
  4. Serve immediately.
