How To Make Spaghetti Squash Alfredo Recipe
A healthier version of Alfredo pasta made with roasted spaghetti squash and creamy sauce.
Serves:
Ingredients
- 1 medium spaghetti squash
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/4 cup chopped parsley
Instructions

Preheat oven to 400°F.

Cut spaghetti squash in half lengthwise and scoop out seeds and pulp.

Brush with olive oil and season with salt and pepper.

Place cut side down on a baking sheet and bake for 30-40 minutes until tender.

In a saucepan, sauté garlic in a tbsp of olive oil until fragrant.

Add heavy cream and Parmesan cheese. Cook over medium heat for 5-10 minutes until thickened.

Scrape spaghetti squash with a fork to loosen the strands, and add to the saucepan. Toss to coat with the sauce and heat through.

Serve hot, topped with chopped parsley.
