How To Make Spaghetti Squash Alfredo Recipe

A healthier version of Alfredo pasta made with roasted spaghetti squash and creamy sauce.

Ingredients

  • 1 medium spaghetti squash
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 cup chopped parsley

Instructions

  1. Preheat oven to 400°F.

  2. Cut spaghetti squash in half lengthwise and scoop out seeds and pulp.

  3. Brush with olive oil and season with salt and pepper.

  4. Place cut side down on a baking sheet and bake for 30-40 minutes until tender.

  5. In a saucepan, sauté garlic in a tbsp of olive oil until fragrant.

  6. Add heavy cream and Parmesan cheese. Cook over medium heat for 5-10 minutes until thickened.

  7. Scrape spaghetti squash with a fork to loosen the strands, and add to the saucepan. Toss to coat with the sauce and heat through.

  8. Serve hot, topped with chopped parsley.
