How To Make Marinated Zucchini with Bow Ties

Tender bow tie pasta is given a crisp and refreshing twist with marinated zucchini and is tossed in tangy wine vinegar for the perfect summer dish.

  • cupolive oil,plus 3 tbsp
  • 4clovesgarlic,minced
  • 2lbszucchini,(about 4), cut in half lengthwise and then cut crosswise into ¼-inch slices
  • tspsalt
  • ¾lbplum tomatoes,(about 6), seeded and diced
  • ½cupfresh basil,chopped
  • ¼cupwine vinegar,(plus 1 tbsp)
  • tspfresh ground black pepper
  • 1lbbow ties


  1. In a large frying pan, heat 3 tablespoons of the oil over moderate heat. Add the garlic, zucchini, and ½ teaspoon of the salt. Cook, stirring occasionally, for about 5 minutes until tender.

  2. Transfer the zucchini to a large stainless-steel, glass, or ceramic bowl and stir in the tomatoes, basil, vinegar, salt, and pepper.

  3. In a large pot of boiling, salted water, cook the bow ties for about 15 minutes until just done. Drain the pasta and toss it with the marinated zucchini and the remaining oil.

  4. Serve and enjoy.
