  • 1 small eggplant, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine the sliced eggplant, zucchini, bell peppers, onion, and cherry tomatoes.

  2. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, lemon juice, oregano, salt, and black pepper.

  3. Pour the marinade over the vegetables and toss well to coat.
