Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1/2 cup pesto sauce
  • 2 cups cooked pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, diced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the chicken cubes with pesto sauce. Let it marinate for at least 10 minutes.

  2. Preheat the grill or grill pan over medium-high heat.

  3. Thread the marinated chicken onto skewers.

  4. Grill the chicken kebabs for about 10-12 minutes, flipping halfway through, until cooked through and slightly charred.

  5. In the meantime, preheat the oven to 400°F (200°C).

  6. In a baking sheet, toss the cherry tomatoes, zucchini, and bell peppers with olive oil, salt, and pepper.

  7. Roast the vegetables for about 10 minutes, until tender and slightly golden.

  8. Cook the pasta according to package instructions, then drain.

  9. In a large bowl, combine the roasted vegetables and cooked pasta.

  10. Serve the pesto chicken kebabs on top of the roasted veg pasta.
