How To Make Red Curry Chicken Kebabs

Ingredients
- 1 lb chicken breast, cut into cubes
- 1/4 cup red curry paste
- 1/4 cup coconut milk
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, cut into chunks
- Wooden skewers, soaked in water
Instructions

In a bowl, whisk together red curry paste, coconut milk, fish sauce, lime juice, and brown sugar.

Add chicken cubes to the marinade and toss until well coated. Let it marinate in the fridge for at least 1 hour.

Preheat grill or grill pan to medium-high heat.

Thread marinated chicken, bell pepper, onion, and zucchini onto the soaked wooden skewers.

Grill the kebabs for about 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
