Really Good Mexican Meatloaf Recipe

Moist and tasty. My family loves this recipe. It is well worth the time to make it. I did not cut the recipe down as I was cooking for a large family when I first made it. Now we just have leftovers for the next day.

How To Make Really Good Mexican Meatloaf

A simple recipe to add some variety to the classic meatloaf! This Mexican-inspired meatloaf still packs the meaty goodness everyone loves but elevated with taco seasoning for a wonderful twist.

Ingredients

  • 1 lb ground chuck
  • ½ lb ground sausage
  • 1 pkg taco seasoning
  • 1 cup oatmeal
  • 3 eggs
  • ½ cup green peppers, chopped
  • ½ cup onions, chopped
  • ½ cup black olives, sliced, canned
  • 2 cups cheddar cheese, shredded
  • 1 cup tomato sauce
  • 1 cup ketchup
  • cup sugar

Instructions

  1. Mix your ground chuck, sausage, vegetables, oatmeal, and eggs.
  2. Salt to taste.
  3. Mix together tomato sauce, ketchup, and sugar.
  4. Add ½ of this mixture to the meatloaf.

  5. At this point you have a choice.
  6. Mix 1 cup of shredded cheese into the meatloaf, or shape the meatloaf in a pan and make a hole in the center.

  7. Fill this hole with 1 cup of cheese and fold over so that it is fully enveloped.

  8. Once in pan, cover with remaining sauce and bake for 1 hour at 350 degrees F. Melt remaining cheese at this time.

  9. I have also made this in the microwave in a glass dish with a lid for 30 minutes on High.
