How To Make Really Good Mexican Meatloaf
A simple recipe to add some variety to the classic meatloaf! This Mexican-inspired meatloaf still packs the meaty goodness everyone loves but elevated with taco seasoning for a wonderful twist.
Ingredients
- 1 lb ground chuck
- ½ lb ground sausage
- 1 pkg taco seasoning
- 1 cup oatmeal
- 3 eggs
- ½ cup green peppers, chopped
- ½ cup onions, chopped
- ½ cup black olives, sliced, canned
- 2 cups cheddar cheese, shredded
- 1 cup tomato sauce
- 1 cup ketchup
- ⅓ cup sugar
Instructions
- Mix your ground chuck, sausage, vegetables, oatmeal, and eggs.
- Salt to taste.
- Mix together tomato sauce, ketchup, and sugar.

Add ½ of this mixture to the meatloaf.
- At this point you have a choice.

Mix 1 cup of shredded cheese into the meatloaf, or shape the meatloaf in a pan and make a hole in the center.

Fill this hole with 1 cup of cheese and fold over so that it is fully enveloped.

Once in pan, cover with remaining sauce and bake for 1 hour at 350 degrees F. Melt remaining cheese at this time.
- I have also made this in the microwave in a glass dish with a lid for 30 minutes on High.
